I have been baking raw vegan desserts for about two years now as an alternative to backing normal desserts. I just love sweet stuff & and in other to save some calories and be healthy I decide to bake raw delicious recipes no and then. I have notice in the two years that the two single most important things to know when baking raw & vegan desserts is to prepare your ingredients, that means soften sweeteners such as dates in water over night.
Sometimes I also soften nuts like Cashew & Hazelnuts in water over night. The second most important thing are silicone forms. Silicone forms make raw vegan baking incredibly easy. Anything that needs to be frozen in a form can be easily taken out of the form with silicone. That’s why you save incredibly much time than using traditional backing pans. For this nice cream cake I used a round silicone pan that made it easy to bring out the cake once it was set and frozen. You can find great silicone forms here.
